Crispy Southern Classic (Printable Version)

Golden, crispy chicken with rich homemade gravy. A comforting southern favorite with just a few ingredients.

# What You'll Need:

01 - 6-8 pieces of thinly sliced chicken breasts.
02 - 2 teaspoons of baking soda.
03 - 2 cups of all-purpose flour.
04 - 1 teaspoon of garlic powder.
05 - A teaspoon of salt.
06 - A teaspoon of ground pepper.
07 - 2 teaspoons baking powder.
08 - 1 egg.
09 - 1 1/2 cups of buttermilk.
10 - 1 tablespoon of hot sauce.
11 - Oil to fry with.
12 - 2 cups milk for the gravy.
13 - Salt and pepper for seasoning the gravy.
14 - A third of a cup of flour for the gravy.
15 - 1/4 cup of leftover frying oil for the gravy.

# Steps to Follow:

01 - Combine the dry ingredients - flour, baking powder, baking soda, and all the seasonings. Separately, whisk together buttermilk, hot sauce, and egg.
02 - Dip the chicken first in the seasoned flour mix, then the wet mixture, and again in the flour. Press it in to stick.
03 - Warm oil in a deep frying pot or a large skillet until it reaches 325°F.
04 - Cook chicken on each side for 3-5 minutes or till they've got that nice crispy golden color. Drain off the extra oil using paper towels.
05 - Pour leftover frying oil into a pan, add flour, and let it cook for a minute. Slowly stir in the milk while whisking till it thickens. Sprinkle salt and pepper to taste at the end.

# Additional Notes:

01 - Using a deep fryer instead of a skillet works too.
02 - Swap in butter for oil in the gravy if you’d like.
03 - Feel free to adjust the spice and salt to your liking.
