Warm up with this cozy one-pan dish—tender chicken pairs up with cheesy rice that's oh-so creamy. Each bite gives you juicy chicken, soft grains, and a rich, dreamy sauce. The best part? It's so easy you only need a single pan and about 40 minutes. Easy ingredients come together for a meal that feels fancy but is super doable at home.

I whipped this up when I was swamped, craving something tasty and fast. The way the Parmesan gets melty and creamy in the rice totally won my family over right away. Now it's the dinner I make whenever someone's craving comfort food we know will hit the spot.

Must-Have Essentials

  • Salt and pepper: Can't skip basic seasonings
  • White wine: Try it for a boost of flavor and a bit of deglazing
  • Italian seasoning: Brings in herby depth
  • Garlic cloves: Fresh is best for aroma
  • Chicken broth: Soaks rice with rich flavor
  • Heavy cream: Makes everything extra smooth
  • Fresh Parmesan: Sharp flavor, melts perfectly
  • Arborio rice: Naturally creamy, plump grains
  • Chicken breasts: Try to pick similar sizes so they all cook evenly

How to Make This Awesome Dish

My grandma always swore by using freshly grated Parmesan. When you toss it into the hot rice, it melts right in and creates these melty cheese pockets that take every bite up a notch.

Try These with It

Take things up a notch by serving it next to crispy arugula salad with lemon vinaigrette or some roasted broccolini with garlic. And if you like wine, a buttery Chardonnay just makes it all taste even better.

Tasty Twists

Mix it up by stirring in mushrooms for a cozy, earthy feel, a handful of baby spinach for extra greens, or chopped sun-dried tomatoes for a tangy punch. Swap in half-and-half if you want it lighter but still creamy.

Stays Nice and Fresh

Pop leftovers in a sealed container and keep them in the fridge for three days. When you reheat, pour in a little bit of chicken broth and stir while it warms up gently—this keeps things creamy and fresh.

This one-pan dish is my go-to for happy vibes at the table. It's so simple—just throw everything together and it always feels special when we dig in. The best dishes are the ones anyone can pull off but everyone remembers.

Frequently Asked Questions

→ Is it cool to swap in chicken thighs?
Go for thighs if you want—they get even more tender. Just cook until they're at 165°F.
→ Out of heavy cream, what else can I toss in?
Half-and-half or whole milk saves the day, but it won't be as rich. No dairy? Coconut cream works pretty well.
→ Can brown rice work here?
Yep! Just let it cook 15 to 20 minutes longer and keep an eye on the liquid—you might need more.
→ What's the best way to keep and reheat extras?
Stick 'em in a sealed container in your fridge for up to three days. Warm up with some milk or broth.
→ Why didn't my rice soften up?
A tight lid is key and don't lift it while cooking. Also, keep your water-to-rice at two parts liquid to one part rice.

Category: Dinner

Difficulty: Intermediate

Cuisine: Italian-American

Yield: 4 Servings

Dietary: Gluten-Free

Ingredients

→ Seasonings

01 Salt and pepper, add as you like

→ Liquids & Oils

02 Two big spoons of olive oil
03 Two cups chicken broth

→ Produce

04 Three minced garlic cloves
05 One little onion, chopped up
06 Chopped parsley to toss on top

→ Grains

07 A cup of white long-grain rice

→ Proteins & Dairy

08 Four chicken breasts, skin off, no bones
09 One cup heavy cream
10 A cup of shredded Parmesan

Instructions

Step 01

Stir in your Parmesan until the sauce gets smooth and cheesy. Taste and add a bit more salt or pepper if you want. Throw parsley over everything right before you eat.

Step 02

Nestle the chicken breasts back into the pan, pop a lid on tight and turn the burner down. Let it all hang out for 20 to 25 minutes until the rice is soft and the chicken is done.

Step 03

Dump in the rice and keep it moving for a couple minutes so it starts to brown. Pour in the broth followed by the heavy cream. Give it a good mix and wait for it to start bubbling softly.

Step 04

Don't clean the skillet! Toss in the chopped onion and garlic. Cook until it softens and you can smell it.

Step 05

Sprinkle both sides of your chicken with pepper and salt. Heat up olive oil in a big pan over medium-high. Lay the chicken in and cook till it’s beautifully browned—flip so both sides get color. Take out the chicken and set it somewhere safe.

Notes

  1. Always use the lid tight so the rice comes out perfectly cooked
  2. Give the pot a stir here and there to stop any rice from sticking
  3. Grab a meat thermometer and make sure the chicken reads at least 165°F inside
