Oven Baked Veggies (Print Version)

# Ingredients:

01 - 1 cup red onion.
02 - 1 yellow bell pepper.
03 - 2 cups carrots.
04 - 2 cups asparagus.
05 - 2 cups sweet potatoes.
06 - ½ teaspoon garlic powder.
07 - 2 cups brussels sprouts.
08 - 1 spoon dried parsley.
09 - 2 spoons olive oil.
10 - 1 red bell pepper.
11 - 1 teaspoon salt.
12 - 2 spoons balsamic vinegar.
13 - 3 garlic cloves.
14 - 1 spoon dried oregano.
15 - 2 cups baby potatoes.
16 - 1 teaspoon pepper.

# Instructions:

01 - Warm up your oven to 425°F. Cover baking sheets using parchment paper.
02 - Toss veggies with balsamic, oil, and spices in a large bowl.
03 - Layer them in a single row on the sheets. Pour any leftover oil mix on top.
04 - Bake for 20 minutes, give it a stir, rearrange, and bake another 20 until cooked through.

01 - Chop firm veggies into smaller pieces.
02 - Lay everything flat so it bakes evenly.
03 - Mix around halfway to cook thoroughly.
