Mix in the shredded coconut, sweetener, protein powder, and coconut flour. Toss in the vanilla if you're using it. Blend everything until it turns into a firm dough.

Divide the dough into 16 equal portions. Shape each piece into a ball using your hands.

Take each ball and roll it in the reserved extra shredded coconut so it's covered all around.

Pop the truffles into the fridge for about 30 minutes or longer to firm up before you serve them.
