Keto Coconut Fudge (Print Version)

# Ingredients:

01 - 1/2 cup chilled heavy cream or coconut cream.
02 - 3 scoops unflavored whey protein powder.
03 - 3/4 cup unsweetened shredded coconut, save some more for coating.
04 - 4 tablespoons coconut oil or melted butter.
05 - 1/2 cup powdered keto sweetener.
06 - 1/2 cup finely ground coconut flour.
07 - 1 teaspoon optional vanilla extract.

# Instructions:

01 - Start by combining the cold cream and melted butter in a large bowl or food processor. Stir until smooth.
02 - Mix in the shredded coconut, sweetener, protein powder, and coconut flour. Toss in the vanilla if you're using it. Blend everything until it turns into a firm dough.
03 - Divide the dough into 16 equal portions. Shape each piece into a ball using your hands.
04 - Take each ball and roll it in the reserved extra shredded coconut so it's covered all around.
05 - Pop the truffles into the fridge for about 30 minutes or longer to firm up before you serve them.
