Heat a skillet over medium and cook the sausage, breaking it up into pieces as it browns. Once cooked, drain the fat and set it aside.

Grab a large bowl and whisk together the eggs, milk, smoked paprika, garlic powder, pepper, and salt. Make sure everything’s mixed well.

Use a greased baking dish. Start with a layer of sausage, then sprinkle in bread cubes if you’re using them, and any veggies like spinach, onions, or bell peppers. Follow with shredded cheese. Pour the egg mixture all over until it’s evenly coated.

Set your oven to 375°F (190°C). Bake for about 30-40 minutes. You’ll know it’s done when the top looks golden and the center is firm.
