# What You'll Need:

01 - One cup of Arborio rice.
02 - Two cups of cooked lobster chunks.
03 - Four cups of heated veggie or seafood stock.
04 - Two finely diced shallots.
05 - Two minced garlic cloves.
06 - 3 tablespoons of butter.
07 - A cup of grated Parmesan cheese.
08 - The zest and juice from one lemon.
09 - Pepper and salt as needed.
10 - Chopped parsley for topping.

# Steps to Follow:

01 - Get your shallots, garlic, and lobster ready—dice or chop them up. Lay out everything you'll need.
02 - Start by warming up butter. Cook the shallots until they’re soft, then stir in the garlic for about a minute.
03 - Throw in the rice and give it a stir for a couple of minutes until it's golden and coated with butter.
04 - Gradually pour in the warm stock, letting it soak in before adding more. Keep stirring for 18-20 minutes.
