# Ingredients:

01 - 1 cup of smooth peanut butter (avoid natural types).
02 - 1 medium ripe banana, mashed (about ½ cup).
03 - ½ cup of packed brown sugar.
04 - 1 large egg.
05 - ½ teaspoon of baking soda.
06 - ¼ teaspoon of kosher or sea salt.
07 - 1 cup of rolled oats (quick-cooking).
08 - 1 cup of chocolate chips (choose milk, dark, semi-sweet, or peanut butter).

# Instructions:

01 - Set your oven to 350°F. Lay parchment or a silicone mat on your baking sheets.
02 - Blend banana, peanut butter, sugar, and egg together until smooth using an electric mixer.
03 - Stir in oats, salt, and baking soda until the mixture comes together.
04 - On low, mix in the chocolate chips until they’re evenly scattered.
05 - Let the dough sit for about 5 minutes to firm up.
06 - Scoop out 2-tablespoon portions, roll into balls, and arrange 12 on each baking sheet.
07 - Bake for 8 to 10 minutes, until cookie edges are golden and firm.
08 - After 5 minutes, move cookies to a cooling rack to finish cooling.

01 - Stick with regular peanut butter, not the kind with oil separation.
02 - Use certified gluten-free oats if you need them.
