Combine water, sugar, salt, and oil in a medium pot. Heat over medium-high until it starts boiling.

Take the pot off the stove, blending in the flour until it comes together smoothly. Cool for 10 minutes.

Heat 2 quarts of oil in a large deep pan to 375°F (190°C).

Move the cooled dough into a piping bag with a star tip attachment.

Squeeze strips of dough into the hot oil. Fry each for 2 minutes on both sides until crispy and golden. Set them on paper towels to drain excess oil.

Combine cinnamon and sugar in a wide dish. Toss the warm churros in the sugary mix until they're covered.
