Set your oven to 375°F. Prepare a baking tray by laying on parchment or hitting it with cooking spray.

Mix the flour, sugar, salt, baking powder, nutmeg, and cinnamon in a bowl. Stir until it’s all blended well.

In another bowl, beat together the eggs, milk, melted butter, and vanilla extract until it’s smooth.

Combine the wet mixture into the dry stuff and stir gently, just enough so there are no dry bits left. Carefully stir in the apple pieces.

Plop spoonfuls of batter onto your tray, keeping them a couple of inches apart. Put it in the oven for about 14-16 minutes, until the tops are nice and golden.

While your fritters cool a bit, stir together the vanilla, milk, and powdered sugar until the mixture is smooth and ready to drizzle.

Pour the glaze over your warm fritters and let it set for a few minutes before enjoying.
