Easy Chicken Wild Rice (Print Version)

# Ingredients:

→ Base

01 - 2 tablespoons butter
02 - 1 tablespoon olive oil
03 - 3/4 cup wild rice, uncooked

→ Vegetables

04 - 1 medium onion, finely chopped
05 - 2 carrots, medium-sized, peeled and diced
06 - 1 stalk celery, finely diced
07 - 3 garlic cloves, minced

→ Soup Base

08 - 1 lb chicken breasts, cut into small pieces
09 - 4 cups chicken stock
10 - 1/4 cup all-purpose flour
11 - 1 cup heavy whipping cream
12 - Freshly chopped parsley, optional
13 - Italian seasoning, 1/2 teaspoon
14 - Salt and pepper, add based on taste

# Instructions:

01 - Follow the instructions on the packaging to make the rice.
02 - In a pan with butter and oil, cook down carrots, onions, and celery until soft, about 7 minutes.
03 - Stir in garlic and flour, cook briefly (about 1 minute). Slowly mix in chicken stock to combine.
04 - Toss in cooked rice, chicken, cream, and seasonings. Let it simmer for 10 minutes, stirring occasionally.
