Cheese Stuffed Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 4 pieces of salmon, about 6 ounces each

→ Filling

02 - 2 handfuls of fresh spinach
03 - 1 softened block of cream cheese
04 - 1 cup of Parmesan, shredded
05 - 1 tablespoon of olive oil
06 - 2 finely chopped garlic cloves

→ Blackening Seasoning

07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1 teaspoon smoked paprika
10 - 1 teaspoon cayenne (spicy!)
11 - A sprinkle of salt and pepper

→ Serving

12 - Slices of lemon

# Instructions:

01 - Set your oven to 375°F and oil up a baking tray.
02 - Heat olive oil in a skillet, cook garlic and spinach till wilted. Let cool, then add cream cheese and Parmesan.
03 - Slice an opening in each salmon piece. Cover with a mix of blackening spices.
04 - Stuff the salmon with the cheesy spinach blend. Bake for 15-20 minutes till the salmon flakes easily.

# Notes:

01 - Less cayenne makes it less spicy
02 - Frozen spinach that has been thawed works fine
03 - You can grill it instead of baking
