Rinse strawberries, dry them gently, and set aside. Remove the tops and scoop out a bit from inside, keeping the bases whole.

Whip cream cheese until it’s creamy. Stir in powdered sugar and vanilla extract until light and airy.

Use a small spoon or piping bag to stuff the strawberries. Let the filling stick out just a little from the top.

Top with graham cracker crumbs. If you like, throw on some chocolate drizzle, crushed nuts, or sprinkles.

Pop them in the fridge for at least 30 minutes so the filling can firm up before serving.
