Crispy Salmon Bites (Print Version)

# Ingredients:

→ Fish & Flavors

01 - 16 ounces of fresh salmon, remove the skin
02 - 1 tablespoon of olive oil
03 - 1/2 teaspoon onion powder
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon of smoked paprika
06 - A pinch of cayenne (optional if you like things spicy)
07 - Salt and a dash of freshly ground pepper, add as needed

→ Sauce with a Tang

08 - 4 tablespoons mayo
09 - 2 tablespoons of sweet chili sauce (Thai-style)
10 - 1 teaspoon of spicy sriracha
11 - 1 teaspoon honey for sweetness
12 - Juice from a fresh lime, about 1/2 teaspoon

# Instructions:

01 - Cut your salmon into 1-inch cubes. Toss the pieces with a blend of olive oil, garlic powder, onion powder, paprika, cayenne (if you want more spice), salt, and pepper. Make sure it coats evenly.
02 - On medium-high heat, get your non-stick pan ready. Cook each side of the salmon pieces for 2-3 minutes until they turn golden and crispy.
03 - Heat your oven to 400°F. Place the seasoned salmon bites on a baking sheet lined with parchment, keeping them spaced apart. Bake for 10-12 minutes until thoroughly done.
04 - Set your air fryer to 375°F. Lay the seasoned salmon in a single layer inside the basket. Cook for 8-10 minutes, flipping the bites halfway through.
05 - In a small bowl, combine mayo, sweet chili sauce, sriracha, honey, and lime juice. Mix until it's smooth and creamy.
06 - Coat the cooked salmon pieces in the tangy sauce, or pour it on top. Add some chopped green onions, a sprinkle of sesame seeds, or fresh cilantro as a finishing touch, if you'd like.

# Notes:

01 - Pick your cooking method—pan, oven, or air fryer—all three work great.
02 - Adjust the heat by tweaking the amount of sriracha or cayenne to your liking.
03 - The sauce can be prepped up to 3 days before and kept in the fridge.
