# Ingredients:

→ Wet Ingredients

01 - 1/4 cup honey or maple syrup
02 - 1 cup shredded zucchini, water squeezed out
03 - 1 teaspoon vanilla essence
04 - 1 cup puréed pumpkin
05 - 3/4 cup light brown sugar
06 - 2 whole eggs
07 - 1/2 cup coconut or vegetable oil

→ Dry Ingredients

08 - 1/4 teaspoon powdered ginger
09 - 1/2 teaspoon baking soda
10 - 1 teaspoon baking powder
11 - 1/4 teaspoon salt
12 - 1 1/2 teaspoons ground cinnamon
13 - 1 3/4 cups plain flour
14 - 1/2 teaspoon nutmeg

→ Mix-ins (Optional)

15 - 1/2 cup chocolate chunks
16 - 1/2 cup chopped pecans or walnuts

# Instructions:

01 - Set your oven to 350°F. Coat a 9x5 pan with grease or parchment paper.
02 - Beat together eggs, oil, pumpkin, brown sugar, honey, zucchini, and vanilla until well blended.
03 - Stir the flour, spices, salt, and baking powders in a different bowl.
04 - Slowly add the dry mixture to the wet one. Mix in nuts and chocolate if using. Bake for 50 to 60 minutes.
