01 - Red bell pepper, sliced into thin pieces
02 - A whole onion, thinly sliced for caramelizing
03 - Garlic cloves, minced finely (2 cloves)
04 - Red potatoes, chopped into bite-sized cubes (2 pounds)
05 - Sliced sausage, smoky and savory, cut into quarter-inch thick rounds (1 pound)

06 - Dried thyme, fragrant and earthy (1 teaspoon)
07 - Sea salt to taste (1 teaspoon)
08 - Paprika for a rich flavor (1 teaspoon)
09 - Fresh parsley leaves for adding a pop of green at the end
10 - Fresh rosemary, chopped roughly for garnish (1 tablespoon, or 1 1/2 teaspoons dried)
11 - Cooking avocado oil (1/4 cup)
12 - Ground black pepper, freshly cracked for a touch of heat (1/4 teaspoon)

# Steps to Follow:

01 - Heat half of the avocado oil until it's hot in a big pan. Place the sausage slices in and cook them for about 4-5 minutes, letting them get a nice golden and crispy look. Once done, pull them out and leave them aside.
02 - Add the rest of the oil to the pan and toss in the potato chunks. Stir them every now and then while cooking them for 5-7 minutes. You’re aiming for that delicious outer crust to form.
03 - Add the sliced onions and peppers. Stir them around occasionally and let them hang out in the pan for about 5-7 minutes so they all cook evenly.
04 - Toss in the garlic, thyme, paprika, salt, and pepper. Give everything a good mix so the flavors spread around. Finally, put the sausage back into the skillet, mixing it all together.
05 - Lower the heat and let the whole dish cook for another 5-7 minutes. The potatoes should be tender with crispy edges! Sprinkle rosemary on top and stir gently to release the scent. Garnish with parsley if you'd like a dash of fresh color.
