Potato Cake Maple Glaze (Print Version)

# Ingredients:

01 - 3 cups of plain flour.
02 - 1 cup granulated sugar.
03 - 4 teaspoons of baking powder.
04 - A pinch of nutmeg (½ teaspoon).
05 - ¼ teaspoon of table salt.
06 - 2 cups sweet potatoes, cooked, peeled, and mashed.
07 - 1½ cups of milk.
08 - 2 eggs that have been whisked.
09 - 2 teaspoons of vanilla flavoring.
10 - ½ cup butter (1 stick), melted.
11 - 1 cup packed brown sugar (for topping).
12 - 2 tablespoons plain flour (used for topping).
13 - 1 tablespoon cinnamon powder (for topping).
14 - ½ cup softened butter (for topping).
15 - 2 cups powdered sugar (used for the glaze).
16 - 3 tablespoons of milk (for the glaze).
17 - 3 tablespoons maple syrup (for the glaze).
18 - 1 teaspoon vanilla essence (for the glaze).
19 - 1 teaspoon cinnamon (for the glaze).
20 - ½ cup chopped pecans, optional (for glaze).

# Instructions:

01 - Preheat your oven to 350°F and coat a 9x13 pan with cooking spray so nothing sticks.
02 - In a big bowl, stir together the flour, baking powder, sugar, nutmeg, and some salt.
03 - In a separate smaller bowl, blend the mashed sweet potatoes with milk, beaten eggs, and vanilla flavor.
04 - Pour the wet ingredients into the dry ones and gently mix until combined. Add in the melted butter last and stir lightly.
05 - Combine brown sugar, flour, and cinnamon in a bowl. Using a fork, work in softened butter until it's crumbly.
06 - Spread the batter into the baking dish, sprinkle the crumble on top, then lightly swirl a knife for a marbled look.
07 - Place in the oven for 35-40 minutes. It's ready when a toothpick poked in the center comes out clean.
08 - Blend powdered sugar with milk, maple syrup, vanilla, cinnamon, and pecans (if using), and pour it over the still-warm cake.
