Sweet Pudding Cookies (Printable Version)

Soft green sandwich cookies made with pistachio mix, stuffed with vanilla frosting and sprinkled for decoration. A fun treat for holidays.

# What You'll Need:

01 - 1 packet (3.4 oz) instant pistachio-flavored pudding.
02 - 1 cup unsalted butter, softened, split into portions.
03 - 3/4 cup granulated sugar.
04 - 1 large egg, room temperature.
05 - 1 and 1/2 cups plain flour.
06 - 1/4 teaspoon of table salt.
07 - 8 oz confectioners' sugar.
08 - 1/2 teaspoon high-quality vanilla extract or paste.
09 - 1 tablespoon of low-fat (2%) milk.
10 - Green decorative sprinkles.

# Steps to Follow:

01 - Whip together the butter, sugar, and pudding powder until fluffy.
02 - Stir in the egg until it's fully worked into the mixture.
03 - Gradually add the salt and flour until dough forms.
04 - Sandwich the dough between two parchment sheets, roll to 1/8 inch, and freeze for 20 minutes.
05 - Use a cutter for circles, remove centers from half, then refreeze.
06 - Pop into a 350°F oven for 6–8 minutes, until just firm.
07 - Mix milk, confectioners' sugar, butter, and vanilla until light and creamy.
08 - Spread filling on uncut cookies and cap with cut-out cookies.
09 - Sprinkle green sugar into the cutouts and shake off any extra.
