One Pot Meal (Print Version)

# Ingredients:

01 - 1/2 cup parmesan cheese.
02 - 1/4 cup fresh Italian parsley, minced.
03 - 2 cups Jasmine rice.
04 - 5 cups chicken broth, kept hot.
05 - 1 cup dry white wine.
06 - 1/2 teaspoon ground black pepper.
07 - 2 pounds chicken breast pieces, 1-inch cubes, no skin or bones.
08 - 2 teaspoons garlic, finely chopped.
09 - 1 diced medium onion.
10 - 2 large shredded carrots (around a cup).
11 - 2 tablespoons butter.
12 - 1/4 cup olive oil.
13 - 2 teaspoons salt, use half first.

# Instructions:

01 - Set a heavy pot on medium stove heat.
02 - Pour in the olive oil and toss in the butter to the pot.
03 - When the butter melts, add onions, carrots, garlic, and 1 teaspoon of salt. Let it cook about 10 mins till soft, stir now and then.
04 - Drop in chicken chunks, pepper, and the other teaspoon of salt. Cook till brown on every side, around 8-10 mins.
05 - Turn heat to high and pour wine. Stir every so often and cook till wine’s almost all gone.
06 - Add rice and hot broth. Let boil, lower the heat, cover, and cook slow for around 15-20 mins till the rice is perfect.
07 - Switch heat off. Mix in parmesan and parsley. Keep the lid on so it stays hot.

# Notes:

01 - Try adding basil or Italian herbs for more taste.
02 - Shortcut: Use a rotisserie or pre-cooked chicken.
