Tangy olive pasta twist (Print Version)

# Ingredients:

→ Main Ingredients

01 - 100g feta or crumbled blue cheese, in cubes
02 - 1/2 pound of your preferred pasta
03 - 1 cup of big green olives, chopped roughly (no pits)

→ Dressing

04 - 1 fresh garlic clove, minced
05 - 1 lemon
06 - 1/4 cup of salty olive juice
07 - 1/3 cup of high-quality olive oil
08 - Add black pepper as needed

# Instructions:

01 - Boil some water in a big pot, throw in a little salt, and cook the pasta till it's ready (just follow the instructions on the package). Rinse the pasta under cold water after draining it.
02 - Take a small jar with a lid. Pour in the olive oil, olive juice, minced garlic, zest from half a lemon, some juice from 1/4 of the lemon, and as much black pepper as you'd like. Close the lid and shake it all up until it's mixed well.
03 - In a big bowl, mix your cooked pasta with the chunky-cut olives and feta cubes. Pour the dressing over it and toss so everything's coated nicely. Taste and tweak with more pepper, lemon, or salt, if you think it needs it. Have fun eating!

# Notes:

01 - Use just a little salt for the cooking water since the brine and cheese are salty.
02 - For better flavor, chill the dish for about half an hour before serving it.
03 - Store it in something airtight, and it'll stay fresh for up to 3 days.
