In a large bowl, combine heavy cream, whole milk, sugar, kosher salt, vanilla extract, peppermint extract, and green food coloring (if desired). Whisk until fully blended.

Pour the prepared mixture into an ice cream maker and churn according to the manufacturer's instructions.

While the ice cream is churning, combine chocolate chips and coconut oil in a small glass bowl. Microwave for 1 minute and stir until smooth. If necessary, microwave an additional 20-30 seconds and stir again. Allow the melted chocolate to cool slightly at room temperature.

When the churning process is complete, transfer one-quarter of the ice cream into an airtight container. Drizzle thin lines of melted chocolate over the layer. Repeat this process with additional layers of ice cream and chocolate until all components are used. Secure the container and freeze until firm.
