Mexican Shrimp Dish (Printable Version)

A citrusy Mexican-inspired shrimp creation with crunchy veggies and fresh herbs, marinated to perfection in minutes.

# What You'll Need:

01 - 1/3 cup fresh lemon juice.
02 - 1/3 cup fresh lime juice.
03 - 1 medium avocado, diced.
04 - 1/2 medium cucumber, peeled and diced.
05 - 3/4 cup red onion, chopped.
06 - 1 medium jalapeño pepper, diced.
07 - Salt and pepper, adjust to taste.
08 - 1 1/4 pounds medium shrimp, peeled and deveined.
09 - 1/2 cup cilantro, chopped.
10 - 2 medium roma tomatoes, diced.

# Steps to Follow:

01 - Get a pot of water boiling. While that's heating, make an ice water bath. Toss shrimp into the boiling water for just one minute until they turn pink. Quickly move them to the cold water to stop cooking. Drain and dice them into 1/2-inch chunks.
02 - Toss shrimp, lime juice, lemon juice, onion, jalapeño, cilantro, and tomatoes into a non-reactive bowl. Sprinkle on some salt and pepper to season.
03 - Stick the bowl in the fridge for about half an hour to an hour.
04 - Mix in the avocado and cucumber. You can strain out some of the excess juice if you want.
05 - Scoop it up with chips or spread on tostadas.

# Additional Notes:

01 - Want more spice? Replace jalapeño with serrano pepper.
02 - White fish works if shrimp isn’t your thing.
03 - Cooking seafood first makes it safer to eat.
