Mix mayonnaise, pickles, mustard, vinegar, paprika, garlic powder, and onion powder in a bowl until everything's blended and smooth. Store it in the fridge while getting the rest ready.

Warm up a skillet over medium heat and drizzle in the olive oil. Toss in the chopped onions, cooking them for a couple of minutes until soft. Add the ground beef, breaking it apart as it cooks. Sprinkle on some salt and pepper. Cook thoroughly and drain any extra fat.

Heat the tortillas lightly, either in the microwave or a clean skillet, to make them flexible. Spread some sauce on each tortilla first. Then pile on the cooked beef, lettuce, cheddar cheese, and pickles, if you're using them.
