Warm up the sesame oil in a wok or large pan on medium-high heat until it’s nice and hot.

Add the carrots, peas, garlic, and diced onion to the pan. Stir them around and cook until they’re soft and smell incredible.

Move the veggies to one side of the pan and pour the eggs into the empty spot. Stir and cook them gently on medium-low heat until they’re scrambled.

Stir in the soy sauce and rice. Mix thoroughly to ensure the rice gets heated up and soaks in all the flavor.
