Hearty Soup Bowl (Printable Version)

# What You'll Need:

01 - 1 large onion, chopped into small pieces.
02 - 1 pound minced lamb or beef.
03 - 3 garlic cloves, finely chopped.
04 - 2 celery stalks, diced.
05 - 2 big carrots, chopped up.
06 - 1 cup of frozen corn kernels.
07 - 1 cup of frozen green peas.
08 - 4 tablespoons of beef stock.
09 - 1 tablespoon Worcestershire sauce.
10 - 1 teaspoon dried thyme leaves.
11 - 1 bay leaf to add flavor.
12 - A pinch of salt and pepper, as per taste.
13 - 2 tablespoons butter to mix in.
14 - 4 cups creamy mashed potatoes.
15 - 1/2 cup of heavy cream for an optional richness.
16 - Fresh parsley to sprinkle on top.
17 - 2 tablespoons thick tomato paste.

# Steps to Follow:

01 - In a big pot, cook the ground meat on medium heat until it turns brown. Get rid of any unwanted grease.
02 - Toss in the onion, garlic, celery, and carrots. Stir and let them soften for about 5 minutes.
03 - Mix in the thyme, Worcestershire sauce, salt, pepper, bay leaf, and tomato paste. Let it cook another 2 minutes.
04 - Pour in your broth and let everything bubble gently for 20 minutes, stirring occasionally.
05 - Add in frozen peas and corn. Allow them to cook for another five minutes.
06 - Take out the bay leaf. Stir in butter and cream (if you're using it).
07 - Spoon it into bowls, scoop mashed potatoes on top, and sprinkle with parsley.
