Glazed Apple Fritter Bites (Print Version)

# Ingredients:

01 - 1½ cups Honeycrisp or Gala apples, diced small (around 2 medium)
02 - ½ cup unsweetened applesauce
03 - 1 large egg
04 - 2 teaspoons ground cinnamon
05 - 1½ cups plain all-purpose flour
06 - ¼ cup unsalted butter, melted
07 - ½ teaspoon vanilla extract
08 - ¼ cup white sugar
09 - 2 teaspoons baking powder
10 - ½ teaspoon kosher salt

→ Cider Glaze Topping

11 - ⅓ cup and 2 tablespoons apple juice or cider
12 - 2 cups confectioners’ sugar

# Instructions:

01 - Set oven to 400°F and coat your baking tray with cooking spray.
02 - Stir together the cinnamon, flour, salt, and baking powder in a medium-sized bowl.
03 - Whisk the melted butter and white sugar in a bigger bowl. Mix in the applesauce, egg, and vanilla until it’s all smooth.
04 - Carefully fold the dry ingredients into your wet ingredients, stopping once just blended. Gently stir in the diced apples.
05 - Place spoonfuls of batter onto the baking tray with spaces in between. Bake for 10 minutes.
06 - As the bites bake, mix the cider with powdered sugar until the glaze is smooth and easy to pour.
07 - Shift oven to broiler after baking time. Brush the warm bites with a layer of glaze and broil for 2-4 minutes, turning the tray as needed for a bubbly finish. Add leftover glaze and let them cool for 15 minutes to set.
