Whisk the melted butter and white sugar in a bigger bowl. Mix in the applesauce, egg, and vanilla until it’s all smooth.

Carefully fold the dry ingredients into your wet ingredients, stopping once just blended. Gently stir in the diced apples.

Place spoonfuls of batter onto the baking tray with spaces in between. Bake for 10 minutes.

As the bites bake, mix the cider with powdered sugar until the glaze is smooth and easy to pour.

Shift oven to broiler after baking time. Brush the warm bites with a layer of glaze and broil for 2-4 minutes, turning the tray as needed for a bubbly finish. Add leftover glaze and let them cool for 15 minutes to set.
