Garlic Lobster Bites (Printable Version)

Soft lobster chunks cooked with tangy lemon, herbs, and rich garlic butter. A simple but stunning choice for special get-togethers.

# What You'll Need:

01 - 2 tablespoons olive oil.
02 - 2 tablespoons parsley, chopped fine.
03 - 4 minced garlic cloves.
04 - 1 pound of lobster tail, chopped small.
05 - 1/4 teaspoon of paprika.
06 - Salt and pepper, however much you'd like.
07 - 1/4 cup dry white wine if you choose to use it.
08 - 1 tablespoon of lemon zest.
09 - 2 tablespoons of unsalted butter.
10 - 1 tablespoon fresh lemon juice.

# Steps to Follow:

01 - Slice the lobster tails open lengthwise, remove the meat, then cut it all into little chunks.
02 - Put some oil in a hot pan on medium-high, toss the lobster in, and cook for 2-3 minutes until it's just about done. Pull it out and set it aside.
03 - Drop the butter into the same pan to melt it down. Stir in the garlic and let it cook a minute or two, just enough to smell amazing.
04 - Pour the lemon juice, sprinkle in the zest and paprika, and splash in the wine if you're using it. Let it bubble gently for 2-3 minutes so it thickens a bit.
05 - Toss the lobster back into the sauce, giving it all a good stir for a minute or two to bring everything together.
06 - Sprinkle on some salt, pepper, and parsley. You can add lemon slices on top for extra flavor if you want.

# Additional Notes:

01 - Shrimp works just as great if you don't have lobster.
02 - Add some cream if you want it richer.
03 - Serve it up as a small dish or toss it with a salad.
