French Toast Muffins (Print Version)

# Ingredients:

→ For the Bread Cups

01 - 4 large eggs
02 - 1 cup whole milk
03 - 4 cups stale bread, chopped into cubes about 1 inch big
04 - 2 teaspoons vanilla extract
05 - 1 teaspoon cinnamon powder
06 - 1/2 cup heavy cream
07 - 1/4 cup white sugar

→ For the Sweet Topping

08 - 2 tablespoons butter, melted
09 - 1/4 cup sugar
10 - 1 teaspoon cinnamon

# Instructions:

01 - Cut up your old bread into roughly 1-inch pieces. Toss them in a bowl to keep handy.
02 - Grab a big bowl and whisk together eggs, milk, cream, sugar, vanilla, and cinnamon. Stir until smooth and blended.
03 - Pour the custard mixture over the bread cubes and mix gently so everything gets soaked. Set aside for 10 minutes to let the bread soak it all up.
04 - Preheat the oven to 350°F (175°C). Lightly grease your muffin pan or line it with paper cups.
05 - Evenly distribute the custard-soaked bread among the muffin tin spots. Press each one down gently to pack them in.
06 - In a tiny bowl, stir your cinnamon with the sugar. Drizzle melted butter over each muffin, then top generously with the cinnamon sugar mix.
07 - Put them in the oven for 20-25 minutes. They're ready when they look golden and a toothpick comes out clean.
08 - Let the muffins sit in the pan for a little while before moving them to a cooling rack. They're great warm or at room temp—try adding maple syrup!

# Notes:

01 - You can prep the custard and soak the bread a day ahead to save time.
02 - Spice it up with things like cardamom or nutmeg to change the flavor profile.
03 - Add some powdered sugar or a dollop of whipped cream for a fancier touch.
