Fish Dipping Sauce (Print Version)

# Ingredients:

01 - 2 limes, squeezed for their juice.
02 - 1/2 cup water at room temperature.
03 - 1/4-1/2 cup of fish sauce.
04 - 2-4 tablespoons of sugar to taste.
05 - 2 cloves of garlic, chopped finely.
06 - 1 tablespoon of finely shredded carrots (optional).
07 - A couple of Bird's eye Thai chilis or 2 teaspoons of chili sauce (optional).

# Instructions:

01 - In a bowl, stir the fish sauce, sugar, and water. Make sure the sugar dissolves completely.
02 - Throw in the garlic, lime juice, carrots, and chilis. Adjust the taste with a little extra lime or fish sauce if needed.
03 - Set it aside for about 10 minutes so the flavors blend well.
04 - Serve it with seafood, grilled meats, or spring rolls, and top with chopped green onions if you’d like.

# Notes:

01 - You can make this 1-2 days in advance.
02 - Keeps well in the fridge for about 5-6 days.
03 - Not freezer-friendly.
