Egg Cheese Roll-Ups (Print Version)

# Ingredients:

01 - 4 large eggs
02 - 4 big tortillas, 8 to 10 inches wide
03 - 1/4 cup (60 ml) milk
04 - Salt and pepper, as much as you like
05 - 1/2 cup (60 g) shredded cheese, like cheddar or Monterey Jack
06 - 1 tbsp of butter or oil
07 - 4 sausage links or 1/2 pound ground breakfast sausage

08 - Salsa to dip or top with
09 - 1/4 cup spinach, chopped into small pieces
10 - 1/4 cup diced onions or colorful bell peppers

# Instructions:

01 - Warm up a skillet on medium. Brown the sausages for 8-10 minutes until cooked through, or crumble and cook ground sausage until no pink remains. Put it on paper towels to drain excess grease.
02 - Mix the eggs, milk, plus a pinch of salt and pepper in a bowl. Heat a skillet with butter or oil on medium-low. Add the egg mix and stir softly until fully cooked but still creamy. Turn off the heat.
03 - Spread a tortilla open and sprinkle cheese in the middle. Pile on eggs, sausage, and anything optional like spinach or onions. Roll it up tight while tucking the edges. Do the same for the others.
04 - To give them a nice crunch, place the rolled tortillas seam-side down in a skillet on medium. Toast them for about 1-2 minutes on each side.
05 - Serve the warm roll-ups with some salsa or any dipping sauce you like.

# Notes:

01 - You can prep ahead! Wrap them in foil or parchment and chill for up to 3 days.
02 - Freeze each roll individually for two months max. Defrost in the fridge or heat directly from frozen.
03 - Level up the flavor with things like avocado slices, bacon crumbles, or hot sauce.
