Leave the phyllo shells chilling in the freezer while you work on the rest.

Crank up your oven so it gets to 350°F. Give it a minute to get hot.

Toss the beef in a skillet and break it apart while you cook. Keep stirring till no pink is left. Once it's cooked, pour out any extra grease.

Dump in the taco seasoning and the whole can of tomatoes with chiles. Give everything a stir. Let it bubble together for a handful of minutes so the flavors hang out.

In a big bowl, blend the cheese with the ranch. Then add in that flavorful meat. Stir till it's all mixed together.

Spoon the loaded beef mix into each cold phyllo shell. Don't pack them too full or they'll spill. Slide the tray into the oven. Bake for 8-10 minutes if they're fresh, or 10-13 minutes straight from frozen, until they're nice and hot.
