Cook bacon bits in a big pan on medium heat until crispy, about 8-10 minutes. Keep 1 tablespoon of the grease.

Mix together eggs, yolk, bacon grease, parmesan, and black pepper. Stir in 1/2 cup of the pasta water.

Cook pasta in boiling salted water until it's just tender. Save 1 cup of the water before draining.

Toss the hot noodles with the egg mix off the heat until smooth and creamy. Stir in the bacon.

Splash in pasta water if needed to thin it out. Sprinkle parmesan, parsley, and pepper on top.
