Creamy Bacon Pasta (Printable Version)

# What You'll Need:

01 - 10 pieces of bacon, chopped into bits.
02 - 1 pound of spaghetti or linguine.
03 - 3 big eggs.
04 - 1 large extra yolk from an egg.
05 - 1 1/4 cups of finely grated parmesan.
06 - 1 teaspoon of freshly cracked black pepper.
07 - 1/2 teaspoon of salt for the water.
08 - Chopped parsley to sprinkle on top.

# Steps to Follow:

01 - Cook bacon bits in a big pan on medium heat until crispy, about 8-10 minutes. Keep 1 tablespoon of the grease.
02 - Mix together eggs, yolk, bacon grease, parmesan, and black pepper. Stir in 1/2 cup of the pasta water.
03 - Cook pasta in boiling salted water until it's just tender. Save 1 cup of the water before draining.
04 - Toss the hot noodles with the egg mix off the heat until smooth and creamy. Stir in the bacon.
05 - Splash in pasta water if needed to thin it out. Sprinkle parmesan, parsley, and pepper on top.
