Use the large side of a grater to shred both the onion and peeled potatoes. Squeeze out any leftover water.

Stir the grated potatoes and onion together with the egg, flour, salt, and pepper until blended well.

Put 2 tbsps of the batter into hot oil in a skillet, spread it out lightly. Cook for 3-4 minutes per side, until it looks golden and crispy.

Fry each side again for 30-60 seconds to make them extra crunchy.

Set on some paper towels to drain. While they're hot, pair with sour cream or applesauce and enjoy.
