Crispy Cheesy Potatoes (Print Version)

# Ingredients:

01 - 1 pound ground beef.
02 - 4 large potatoes, grated and peeled.
03 - 1 onion, finely minced.
04 - 2 garlic cloves, chopped small.
05 - 1 cup cheddar cheese, shredded.
06 - 1 teaspoon of paprika.
07 - Salt and pepper, adjust to taste.
08 - Olive oil, for frying everything.

# Instructions:

01 - Grate peeled potatoes, sprinkle some salt, and squeeze out the water in a bowl.
02 - Place a pan on medium heat and add some olive oil.
03 - Shape the potato mix into patties and cook each side till they turn golden. Put them aside.
04 - Use the same pan to cook the ground beef until it's browned nicely.
05 - Toss onions, garlic, paprika, salt, and pepper into the beef and cook till onions are softened.
06 - Grab a potato patty, pile on the beef mixture, and sprinkle with cheese.
07 - Place another patty on top, pinching the edges together gently.
08 - Cook the stuffed cakes back in the pan until crispy on both sides.
09 - Dish them up warm. Add a dollop of sour cream if you want.

01 - These are perfect for using up leftover potatoes! Make sure to squeeze the liquid out of the grated potatoes to keep them crispy.
