# What You'll Need:

01 - 1/4 cup finely chopped shallots.
02 - 1 tablespoon minced garlic.
03 - 15 oz frozen spinach, well drained.
04 - 2 tablespoons butter, unsalted.
05 - 2 tablespoons plain flour.
06 - 1/8 teaspoon nutmeg, ground.
07 - 1 1/4 cups heavy whipping cream.
08 - 1/4 teaspoon ground black pepper.
09 - 1/2 teaspoon table salt.
10 - 1 cup freshly shredded parmesan.

# Steps to Follow:

01 - Place thawed spinach in a strainer over the sink or bowl. Use a spoon to press out as much liquid as you can.
02 - Melt the butter in a skillet over medium-high heat. Toss in the shallots and garlic, cooking until they soften and smell amazing.
03 - Sprinkle in the flour, stirring constantly, and cook until it barely starts to turn golden, about half a minute.
04 - Slowly pour the cream while mixing. Add the nutmeg, salt, and pepper. Keep stirring as it thickens and starts to bubble.
05 - Add the spinach and parmesan to the cream mixture. Stir well, then take it off the heat. It's ready to serve now!
