Cajun Potato Soup (Printable Version)

Creamy, flavorful potato soup with a hint of spice from andouille sausage and tender veggies, all cooked in one pot. Sprinkle with cheese and green onions to finish.

# What You'll Need:

01 - 13 oz andouille sausage, sliced into thin rounds.
02 - 4 garlic cloves, finely chopped.
03 - 2 celery sticks, diced.
04 - A small onion, finely diced.
05 - Half a cup of heavy cream.
06 - 3 cups of milk.
07 - 3 cups chicken stock.
08 - A couple pounds of Yukon gold potatoes, cubed.
09 - Four tablespoons of plain flour.
10 - 2 tsp Cajun spices.
11 - Salt and pepper to your liking.
12 - Chopped green onions for a garnish.
13 - Some shredded cheddar to finish it off.

# Steps to Follow:

01 - Fry the sausage, celery, and onions in a big pot on medium heat until the onion's softened. Sprinkle in salt and pepper.
02 - Mix in the garlic and cook for about half a minute. Toss in the flour and stir for another minute.
03 - Pour milk, broth, cream, and Cajun seasoning into the pot. Stir until smooth, making sure the flour blends in well.
04 - Drop in the potato cubes and let them simmer for about 10 minutes or until they're soft.
05 - Scoop into bowls, scatter shredded cheese on top, and finish with green onions.
