Classic Potato Streusel (Printable Version)

Fluffy sweet potato mash blended with buttermilk and vanilla, finished off with marshmallows or a crunchy pecan topping.

# What You'll Need:

01 - 1/2 cup melted butter.
02 - 2 large eggs.
03 - 3/4 cup granulated sugar.
04 - 3/4 cup buttermilk.
05 - 1 teaspoon ground cinnamon.
06 - 1 teaspoon baking powder.
07 - 1/2 cup dark brown sugar.
08 - 1/2 cup light brown sugar.
09 - 5 pounds sweet potatoes.
10 - 1/3 cup flour.
11 - Extra butter to grease the baking dish.
12 - 3/4 cup chopped pecans.
13 - 2 cups mini marshmallows.
14 - 1 teaspoon vanilla extract.
15 - 4 tablespoons softened butter.

# Steps to Follow:

01 - Grease a 3-quart dish with butter.
02 - Soften the sweet potatoes using one of the methods listed below.
03 - Preheat your oven to 350°F.
04 - Mash the potatoes with butter, sugar, vanilla, cinnamon, and baking powder. Stir in buttermilk, mix in eggs, and beat the mix until smooth.
05 - Spoon the smooth mixture into the greased dish.
06 - Combine pecans, flour, and both sugars. Mix in melted butter, then sprinkle over the top of the potatoes.
07 - Bake for 35 to 40 minutes.
08 - Bake for half an hour, add marshmallows, then bake again for 5-10 minutes until the marshmallows brown a bit.
09 - Bake at 400°F for 30-60 minutes, boil for 15-20 minutes, or pressure cook on high for 10 minutes in an Instant Pot.

# Additional Notes:

01 - You can prep everything but the streusel ahead of time.
02 - Buttermilk gives it a nice tangy creaminess that isn't too heavy.
