Chocolate Cheese Treat (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 2 tablespoons maple syrup – I went with Lakanto's sugar-free syrup, but any option works.
02 - 1 1/2 cups almond flour – Regular all-purpose flour is fine but make sure it’s been heat-treated to kill bacteria.
03 - 1 teaspoon vanilla extract – Make sure it’s pure for the best flavor.
04 - 1 cup reduced-fat (2%) cottage cheese
05 - 1/4 cup protein powder – I used vanilla, but feel free to try other flavors!

→ Chocolate Layer

06 - 1 teaspoon coconut oil
07 - 1 1/2 cups chocolate chips, separated – I used sugar-free dark chocolate chips from Lily’s.

# Steps to Follow:

01 - Pop the cottage cheese into a food processor or blender and puree until smooth.
02 - Grab a medium-sized bowl and mix everything together, except 1 cup of the chocolate chips, until it’s all combined.
03 - Place the dough in the fridge for half an hour to chill.
04 - Lay parchment paper on a tray. Use a cookie scoop to portion the dough, then roll each piece into a ball.
05 - Transfer your cookie dough balls to the tray and pop them into the freezer for at least 20 minutes.
06 - Put the rest of the chocolate chips in a small microwave-safe bowl and heat in 15-second bursts. Stir between each burst until fully melted.
07 - Coat each chilled dough ball in melted chocolate, then set them back onto the parchment-lined tray.
08 - Refrigerate the balls until the chocolate sets firmly.
