# What You'll Need:

01 - 500g potato gnocchi.
02 - 2 small chicken breasts (360g).
03 - 175g Laughing Cow light cheese.
04 - 1 shallot, finely diced.
05 - 75g lean smoked back bacon, diced.
06 - 60g fresh grated cheddar.
07 - 3 1/2 cups low sodium chicken stock.
08 - 1 teaspoon dried chives.
09 - 1 teaspoon onion powder.
10 - Salt and pepper to taste.
11 - 2 cloves garlic, minced.
12 - 1/2 cup 2% milk.
13 - 1/2 teaspoon dried dill.
14 - 1/2 tablespoon cornstarch.
15 - Fresh parsley for garnish.
16 - 1/2 tablespoon lemon juice.
17 - 1 teaspoon dried parsley.
18 - 1/2 teaspoon garlic powder.

# Steps to Follow:

01 - Simmer chicken in 2 cups of stock for 10-12 minutes until it's done. Once cooked, slice into pieces.
02 - Using cooking spray, crisp up the diced bacon in a pan.
03 - In the same pan, soften the shallot first, then add the garlic for a quick cook.
04 - Pour in the leftover stock, milk, lemon juice, and seasonings. Stir in the cheese and dissolve the cornstarch while whisking.
05 - Combine the gnocchi and chicken with the sauce, bring to a boil, and let it simmer for about 5 minutes until it thickens.
06 - Move the mixture to a baking dish, layer cheese on top, and broil until brown. Add crispy bacon and fresh herbs before serving.
