Simple Cheesy Stuffed Potato Cakes (Printable Version)

Crispy crust and soft cheesy insides. A fun, tasty way to use leftover mash.

# What You'll Need:

→ Main Ingredients

01 - 1/4 cup green onions, chopped (toss these in if you want)
02 - 1/2 cup cooked bacon, crumbled (or swap in sautéed veggies for a veggie-friendly spin)
03 - 1 cup shredded cheese (grab cheddar, mozzarella, or whatever melty cheese you like)
04 - 2 cups mashed potatoes (works with leftovers or fresh)

→ Seasonings and Coatings

05 - Oil for frying
06 - 1 cup breadcrumbs for rolling
07 - Salt and pepper, sprinkle as much as you like
08 - 1 teaspoon garlic powder

# Steps to Follow:

01 - Once they’re out of the pan, let them hang out on some paper towels. Dig in while they’re warm.
02 - Warm the oil up in a big skillet over medium heat. Cook those potato patties a few at a time. Give each side about 3 or 4 minutes till they get nice and crispy.
03 - Take the potato mix and shape it into patties about the size of your palm. Coat each one in breadcrumbs so they get a good crust.
04 - Toss mashed potatoes, cheese, bacon or veggies, green onions, garlic powder, salt, and pepper in a bowl. Mix everything together till it’s all blended.
