Set your oven to 325°F (163°C) and give a 9x13 baking dish a light spray of oil.

In the greased dish, toss together the diced potatoes, cheese, bacon, garlic, and onion.

Pour the mayo over the mixture and make sure to stir it so everything gets covered.

Pop the dish into the oven and bake for around 1½ hours. The potatoes should be soft, and the top will turn golden.

Scoop it out and serve while it’s still hot.
