Blackberry Brie Sandwich (Print Version)

# Ingredients:

→ Blackberry Spread

01 - 2 cups fresh blackberries
02 - 6 tbsp granulated sugar
03 - 3 tbsp good-quality balsamic vinegar
04 - Pinch of kosher salt
05 - 2 tbsp freshly squeezed lemon juice

→ Cheese Toasties

06 - 8 slices crusty sourdough bread
07 - 300g creamy brie cheese
08 - Butter as needed
09 - 1 tbsp finely chopped thyme leaves

# Instructions:

01 - In a saucepan, stir together blackberries, sugar, vinegar, lemon juice, and salt. Heat it up until it boils. Lower heat and let it simmer, mushing the berries as it cooks for 7-10 minutes. Let it cool off.
02 - Cut the brie into slices about ½ inch thick.
03 - Set a skillet over medium heat, making sure it's hot enough to melt the cheese steadily.
04 - Spread butter on one side of four bread slices. Put them in the pan with the buttered side touching the pan. Add thyme and brie slices on top of the bread.
05 - On the other four slices of bread, spread blackberry jam thickly. Lay those slices, jam side facing down, on top of the cheese.
06 - Butter the top of each sandwich, turn them over, and toast until crispy and the cheese inside is gooey.
07 - Rest for a moment, then carefully slice in half with a sharp knife.

# Notes:

01 - Jam will set more firmly as it cools down
02 - Work in batches if your pan can't fit all sandwiches
03 - Avoid high heat to keep cheese melting smoothly
