# What You'll Need:

01 - 10 corn tortillas, fresh and soft.
02 - 1 tablespoon olive oil, for brushing on the tortillas.
03 - 2 1/2 cups of shredded Monterey Jack or Oaxaca cheese.
04 - 3/4 cup of red enchilada sauce.
05 - 1 packet of seasoning made for tacos.
06 - 1 pound of ground beef that's 90% lean.

# Steps to Follow:

01 - Turn on your oven to 450°F and wait until it's fully heated.
02 - Cook the ground beef in a skillet until it's nicely browned. Add the taco seasoning and the enchilada sauce, stir it, then let it simmer briefly before setting it aside.
03 - Dampen a paper towel, wrap the tortillas in it, and microwave for about 60 seconds to get them pliable.
04 - Brush one side of each tortilla with oil. Place the oiled side down, sprinkle a layer of cheese, add the seasoned beef, and top with more cheese. Fold each tortilla in half over the filling.
05 - Arrange the stuffed tortillas on a baking sheet without overlapping them. Bake for 16 minutes or until they turn crunchy.
