Beefy Melt Burrito (Print Version)

# Ingredients:

→ Filling

01 - 2 cups cooked Mexican-style rice
02 - 1 pound ground beef, lean
03 - 1 ounce taco seasoning mix (1 packet)
04 - 1/4 cup beef broth or water
05 - Optional: 1 cup refried beans

→ To Put Together

06 - 4 large flour tortillas
07 - 1 cup warmed nacho cheese sauce
08 - 2 cups crushed Fritos or Doritos
09 - 1/2 cup sour cream
10 - 1 cup shredded Mexican cheese mix

# Instructions:

01 - Cook the beef in a skillet until browned, then stir in seasoning and broth. Let it simmer briefly for about a minute or so. If you're using refried beans, mix them in now.
02 - Follow the directions on your rice package to cook it. Wrap tortillas in a damp paper towel and warm them in the microwave for about 20 seconds.
03 - Take each tortilla and pile on the beef mixture, some rice, Fritos, warmed cheese sauce, shredded cheese, and a dollop of sour cream. Fold the sides in and roll it up snugly.
04 - For a crispy finish, toast each burrito in a skillet over medium heat, flipping once, and cook until it's golden, about 2-3 minutes per side.

# Notes:

01 - Turn up the spice with jalapeños or a dash of hot sauce.
02 - Swap out beef for beans to make it vegetarian.
03 - These freeze well for up to two months.
