If your chicken isn't already in tenders, cut it into strips an inch wide. Sprinkle a little salt and pepper over it.

Crack eggs into one bowl and give them a good mix. In another, toss breadcrumbs together with Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.

Take each chicken piece, dunk it into the egg bowl, then give it a roll in the breadcrumb mix. Want it crunchier? Dunk and roll again for double coating!

Heat your oven to 400°F (200°C). Lay breaded chicken pieces onto a wire rack placed over a lined baking sheet. Spray a light coat of olive oil over them.

Pop the sheet in the oven and cook for 20 to 25 minutes. Flip them over halfway through. They should be golden and at least 165°F (74°C) inside.
