Chicken Avocado Melt (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 slices of sourdough or ciabatta bread
02 - 2 ripe and ready-to-slice avocados
03 - 4 slices of your choice of cheese (cheddar, Swiss, provolone)
04 - 2 chicken breasts without the bones or skin

→ Spreads & Seasonings

05 - 1 tablespoon of extra virgin olive oil
06 - Salt and freshly ground pepper for sprinkling
07 - 1 tablespoon of Dijon mixed mustard
08 - 2 spoons of mayonnaise
09 - Butter or oil to grill sandwiches

→ Fresh Toppings

10 - One tomato sliced into rounds
11 - 1 small red onion cut into thin rings

# Instructions:

01 - Start by seasoning the chicken with pepper and salt. Then, cook over medium/high heat in olive oil for about 6-7 mins per side until done. Let it cool and slice it up.
02 - Chop up the avocado, cut the tomato into slices, and prepare thin rings of red onion. Combine Dijon mustard with mayo and coat the bread slices with it.
03 - Pile the chicken, avocado, cheese, tomato, and onions on one piece of bread. Place the second slice (spread side down) on top.
04 - Place your sandwiches in a skillet coated with butter on medium heat. Cook for 3-4 minutes per side until crispy golden and the cheese has melted.

# Notes:

01 - To enjoy it best, serve right out of the skillet while warm.
02 - Bread stays crunchy if reheated using a toaster oven.
03 - Any cheese you like will work great for this.
