Warm up the oven to 350°F (175°C). Coat a 9x13-inch baking dish lightly with cooking spray.

In a large bowl, toss the apple slices with white sugar, brown sugar, flour, cinnamon, nutmeg, and vanilla. Make sure every piece is coated well.

Spread the apple mixture evenly into the prepared baking dish. Don’t press it down too much—leave some room for the juices to bubble up.

In another bowl, mix together the oats, flour, brown sugar, salt, cinnamon, and baking powder. Stir in the melted butter until the mixture gets crumbly.

Scatter the topping evenly over the apples. Make sure no part of the apples is left uncovered.

Bake for 40 to 45 minutes, leaving it uncovered. It’s ready when the top is golden brown and the apple juices are bubbling around the edges.

Cool it for about 5-10 minutes before serving. This lets the filling settle and makes it easier to dish out. A scoop of ice cream on top is always a win!
