Set your oven to 350°F. Get two 9-inch round pans, line with parchment, and spray with cooking spray.

Combine baking soda, cinnamon, salt, and flour in a bowl. Whisk it all together.

In another bowl, beat the eggs with sugar, oil, and vanilla. Pour the dry mix into this wet mix, and gently fold in pecans and apples at the end.

Pour the mix evenly into the baking pans. Bake for about 50 minutes, then let them cool inside the pans.

Beat butter and cream cheese until smooth. Slowly mix in powdered sugar, cinnamon, and a pinch of salt until it’s creamy.

Put one cake layer on a plate, spread frosting over it, stack the second layer, and cover everything with frosting. Decorate with pecans and apple pieces.
