# What You'll Need:

01 - 4 cups chopped, peeled apples.
02 - 2 teaspoons of cinnamon, ground.
03 - 2 cups of sugar.
04 - 1 teaspoon baking soda.
05 - 2 cups plain flour.
06 - 3 eggs.
07 - 1/2 teaspoon coarse salt.
08 - 1 teaspoon vanilla extract.
09 - 1 cup of vegetable or canola oil.
10 - 3/4 cup pecans.
11 - 8 oz of softened cream cheese.
12 - 1/2 cup of softened butter.
13 - 3 cups powdered sugar.
14 - 1 teaspoon cinnamon (used in frosting).
15 - 1/2 teaspoon kosher salt (used in frosting).
16 - Chopped pecans and some apple slices for topping.

# Steps to Follow:

01 - Set your oven to 350°F. Get two 9-inch round pans, line with parchment, and spray with cooking spray.
02 - Combine baking soda, cinnamon, salt, and flour in a bowl. Whisk it all together.
03 - In another bowl, beat the eggs with sugar, oil, and vanilla. Pour the dry mix into this wet mix, and gently fold in pecans and apples at the end.
04 - Pour the mix evenly into the baking pans. Bake for about 50 minutes, then let them cool inside the pans.
05 - Beat butter and cream cheese until smooth. Slowly mix in powdered sugar, cinnamon, and a pinch of salt until it’s creamy.
06 - Put one cake layer on a plate, spread frosting over it, stack the second layer, and cover everything with frosting. Decorate with pecans and apple pieces.

# Additional Notes:

01 - You can bake this in a single 9x13 pan too.
02 - Leftover frosting? Keep it cold in the fridge.
03 - Dip sliced apples in lemon juice to stop them from browning.
